Grilled Pork Chops with Plum and Bok Choy

1.) 1 tbsp. low-sodium soy sauce
2.) 1 tbsp. rice vinegar
3.) 1 tbsp. grated fresh ginger
4.) 2 tbsp. plus 1 Tsp. extra-virgin olive oil
5.) 3 scallions, thinly sliced
6.) 4 small bone-in pork chops (about 1 inch thick)
7.) kosher salt
8.) Freshly ground black pepper
9.) 6 plum, quartered
10.) 4 heads baby bok choy


1.) Heat grill to medium-high. In a small bowl, combine soy sauce, vinegar, ginger, and 2 tablespoons oil. Stir in the scallions.

2.) Season pork with1?2 teaspoons each salt and pepper. Brush the plums and bok choy with remaining 1 teaspoon oil. Grill the pork until just cooked through, 5 to 7 minutes per side.

3.) Grill plums and bok choy until lightly charred and tender, 1 to 3 minutes per side.

4.) Serve plums and bok choy with pork and spoon scallion dressing over the top.
